Chocolate Cookies (gluten Free)
Ingredients
- 80 gr butter
- 1 tsp vanilla extract
- 90 gr gluten free flour (I use mocaf flour)
- 20 gr cocoa powder
- 15 gr cornstarch
- 50 gr powdered sugar (can still be reduced)
- 1/4 tsp salt
- 1-2 tsp milk uht
Filling
- Jam or Chocolate to taste.
How to make
- 1. Beat butter and vanilla 2 minutes.
- 2. Add flour, cocoa powder, cornstarch, powdered sugar, salt, mix until grainy.
- 3. Add 1-2 tsp of UHT milk, mix until it forms a dough, wrap in plastic, store in the refrigerator for 15 minutes.
- 4. Roll out the dough thinly, print the pattern using embossed cookies (no need to press too much because it can seep down or stick to the mold), cut it using a ring cutter.
- 5. Preheat the oven (I use a temperature of 150°C) on low heat, store on the middle rack, bake until cooked (about 20 minutes). Remove, cool.
- 6. If you eat it just like that, it's already delicious or you want to make a sandwich filled in the middle with jam or according to taste.
