Avocado Pie

Crust Material

  • 100 gr butter
  • 175 gr wheat flour
  • 20 g of powdered sugar
  • 2 tbsp ice water

Filling Material

  • 150 gr avocado flesh
  • 50 gr sugar
  • 30 gr sweet thick cream
  • 2 eggs
  • 1 egg yolk
  • 2 tbsp butter
  • Green food coloring to taste.

How to make

  • 1. Mix butter and powdered sugar, stir using a fork or pastry knife until the texture is like sand.
  • 2. Add ice water, mix well. Round and cover with plastic wrap, put in the refrigerator for 30 minutes.
  • 3. Weigh per 27 grams then print on a pie mold, pierce the bottom with a fork.
  • 4. Oven with a temperature of 160⁰ in a preheated oven until cooked.
  • 5. Lift and remove from the mould.
  • 6. Make the filling: blender avocado, sugar, sweetened condensed cream and eggs. Then transfer to a saucepan. Cook over medium heat, add butter, stir and add green coloring, cook until thickened.
  • 7. Pour the filling into the pie shell, trim and store in the refrigerator until set.
