Ingredients

  • 130 ml uht milk
  • 3 g instant yeast (1 tsp)
  • 55 g eggs (roughly 1 egg)
  • 250 gr high protein flour
  • 30 gr protein flour.medium
  • 10 gr whipping cream powder
  • 40 g sugar
  • 1/2 tsp salt
  • 40 gr butter / margarine

How to make

  • 1. Mix UHT milk and yeast, mix well. Add eggs, sugar and mix well.
  • 2. Enter the flour, whippy cream powder, and salt mix well. Let stand 15-30 minutes, cover with cling wrap. Add butter, mix well.
  • 3. Pour the dough on the work table, knead until elastic or knead with a mixer until elastic.
  • 4. Cover with cling wrap and let stand until doubled.
  • 5. Deflate the dough, cut into pieces and weigh 60 grams each, let stand 10 minutes. From 60 gr, take the remaining 5 grams, divide by 5, fill with stuffing or plain, do it for all dough.
  • 6. Store in a ring that has been smeared with margarine, on a baking sheet lined with baking paper. Let stand until doubled.
  • 7. Grease with uht milk, oven at 180°C, fire up and down for about 20 minutes, adjust each oven.
  • 8. Remove from heat, spread with whole milk or butter.
