Ingredients

  • 100 gr butter
  • 80 gr powdered sugar (adjust to taste, sweetness)
  • 20 g egg yolk (1 egg)
  • 100 gr low protein flour
  • 100 gr medium protein flour
  • 20 gr cornstarch
  • 35 gr almond powder
  • 20 gr parmesan cheese (dry cheese, finely grated/blender)
  • 18 gr milk powder
  • 1/4 tsp baking powder

Topping

  • Almond Slice

Spread

  • Egg Yolk a little milk a little oil a lot

How to make

  • 1. Beat butter, powdered sugar as long as it's smooth, don't overmix so the cookies don't melt.
  • 2. Add the egg yolks and mix well.
  • 3. Enter the sifted dry ingredients, stir with a spatula. Do not overmix, cookies can be tough.
  • 4. If the dough is too soft, put the dough in the refrigerator for 10-15 minutes (I didn't put it in the refrigerator).
  • 5. Put the dough on a plastic sheet, roll out a thickness of 1/2 cm or according to taste, cut using a cookie cutter.
  • 6. Arrange on a baking sheet lined with baking paper, bake for 10 minutes at 150C.
  • 7. Brush with egg yolk, sprinkle with almond slices, bake again at 140C15-20 minutes until cooked (adjust according to your respective oven).
  • *** If you want to spread the egg yolk and bake it, you can also do it, but the result is pretty when it's baked for a while, in my opinion.
