Mesh Cake

Ingredients

  • 250 gr rice flour
  • 50 gr cornstarch
  • 140 gr sugar (according to taste)
  • 1/2 tsp salt
  • 1/2 tsp vanilla powder
  • 220 ml water/ coconut milk ( can be less or more)

Method

  • - Mix flour with sugar, salt and vanilla. Pour in the coconut milk little by little until you get a smooth and sticky dough, not runny nor too thick. Beat the dough for 7-10 minutes. Then rest for 30 minutes. Prepare a mesh cake mold, usually made from a shell / tin with holes in it and a wooden handle, since I don't have both, I put the dough in a triangular plastic bag, or an ordinary plastic bag, punch holes in the ends.
  • - Heat the oil in a cauldron/pan to taste, it can form a mesh cake the size of a small plate/plate. after it's really hot, reduce the heat and then spray the net cake dough over the oil while rotating it so that it forms a net. After a bit sturdy fold according to taste. Can be semicircular, triangular or rolled. Fry until golden yellow. Lift, drain. After it cools down, store it in a closed container so it won't dry out quickly
