Flourless Chocolate Cake

Ingredients

  • 500 gram Dark Chocolate Compound ( DCC ) / chocolate bar
  • 50 gr butter
  • 75 gr margarine
  • 6 eggs
  • 100 grams of sugar
  • 50 grams of cocoa powder

How to make

  • 1. Beat sugar and eggs until stiff.
  • 2. Melt the dcc, margarine and butter in a bowl and add it to the egg mixture. Stir well.
  • 3. Sift cocoa powder and add to the mixture.
  • 4. Pour into 2 18 cm square tins that have been lined with parchment paper, then bake in au bain marie' at 170'c for 30-40 minutes.
  • 5. Once cooked, remove and cut and spread with whipped cream or cheese frosting or ganache.
  • Tips. Use a non-stick pan to prevent water from seeping into the cake batter during baking or wrap the pan with aluminum foil.
