Purple Sweet Potato Layer Ingredients

  • 200 gr steamed purple sweet potato
  • 250 ml coconut milk (I use 115 ml instant coconut milk + water)
  • 95 gr sugar
  • 75 gr tapioca flour
  • 25 gr rice flour
  • 1/4 tsp salt
  • 1/4 tsp vanilla
  • *** Blend purple sweet potato with coconut milk and sugar, add other ingredients, stir, strain.

Pandan Layer Ingredients

  • 50 gr rice flour
  • 15 gr tapioca flour
  • 50 gr sugar
  • 125 ml instant coconut milk
  • 125 suji pandan water (not pandan sediment, if you use sediment because it's thick, just think about it)
  • 2 drops pandan paste
  • pinch of salt
  • *** Mix all ingredients, cook while continuing to stir until slightly thickened, strain (don't let it thicken at all, it will be difficult to print later)

Coconut Milk Lining Bahan

  • 50 gr rice flour
  • 15 gr tapioca flour
  • 250 ml coconut milk that has been cooked with pandan leaves (after cooking: 250 ml yes)
  • 1/4 tsp salt
  • *** Stir all ingredients

Solution

  • 1. Grease the mold with oil using a brush.
  • 2. Heat the steamer, cover the steamer with a cloth.
  • 3. Pour layer by layer, steam each layer for 5 minutes, the last 15 minutes, remove to cool, remove from the mold.

Note

  • If you want it like above, for the white layer, pour a little, shake it so that it is evenly distributed in the middle and sides, trim using a pipette, steam for 3 minutes.
  • The purple layer has a thick consistency, pour it with a spoon, to flatten it, beat a few times.
  • If you want a different arrangement, for example a thicker white layer, please multiply from the recipe.
  • From this recipe, you get 17 pieces with lotus prints and 3 small purple trays.
