Shredded Bread Ingredients

  • 500 gr High Protein Flour
  • 100 gr granulated sugar
  • 25 gr Milk Powder
  • 11 gr Instant Yeast
  • 2 gr Bread Improver
  • 3 egg yolks
  • 130 ml of liquid milk
  • 100 ml Ice Water
  • 100 gr Butter
  • 1 tsp Salt

How to Make Shredded Bread

  • 1. Combine flour, sugar, yeast, bread improver and milk powder, mix well. Then add the egg yolks one by one, mix well.
  • 2. Enter the ice water and cold liquid milk. stir well. Knead until smooth and smooth.
  • 3. Once smooth, add butter and salt. Knead until elastic dough (as in the photo).
  • 4. After elastic, round it and cover it with a cloth or plastic. Let stand / rest the dough until it has doubled in size.
  • 5. After it has doubled in size, punch the dough so that it is flat. Then divide the dough, weigh 35 grams and round it.
  • 6. Rest again for 15 minutes.
  • 7. After 15 minutes, shape the dough according to taste.
  • 8. Rest the dough again for 30 minutes (cover with a cloth)
  • 9. Bake with 200 degrees heat until cooked.
  • 10. Once cooked, cool. Brush with mayonnaise then sprinkle with shredded.
