Yule Log Cake
Ingredients
- 3 egg yolks
- 3 whole eggs
- 1/2 tsp SP
- 70 g sugar
- 30 g triangular flour
- 5 gr cornstarch
- 5 grams of powdered milk
- 25 gr cocoa powder
- 60 gr melted butter
- 1 tsp blackforest pasta (me: chocolate paste)
Method
- Baking pan : 23x28x3 (me :24×24)
- 1. Beat eggs, sp, sugar until thick and trail, enter the dry ingredients that have been sifted, stir back with a spatula or mixer on low speed until mixed
- 2. Enter the chocolate paste and melted butter, mix with a spatula until well blended
- 3. Pour into a baking sheet that has been lined with baking paper in an oven for 20 minutes at 180 (I used to use a temperature of 170; the top wasn't dry, so the top skin peeled off and the cake broke a little when it was rolled up)
- 4. After it is cooked, remove it from the pan and let it cool
- Spread in buttercream mocha + ceres
- Mocca buttercream outer layer mix with chocolate paste and a little chocolate coloring
