Material A

  • 430 gr high protein flour
  • 70 gr medium protein flour
  • 110 gr sugar
  • 10 gr instant yeast
  • 1 egg yolk + 1 whole egg
  • 50 gr whipping cream dairy
  • 90 gr cold liquid milk
  • -/+ 110 gr cold water

Material B

  • 90 gr butter/margarine/mix
  • 7 g salt

How to make

  • • Knead ingredient A until 3/4 smooth
  • • Enter material B knead until elastic.
  • • Cut and weigh @ 40 gr, round, rest 30-45 minutes
  • • Roll out the dough, remove the air, fold the dough
  • • Place the dough into the loaf pan ( ** grease the pan with carlo / eazee spray) , let it rise to the level of the lip of the pan, brush with evaporated milk
  • • Bake in a preheated oven at 170°C. Fire up and down. 10 minutes, turn off the top heat, continue with the bottom fire for 15-20 minutes or until browned evenly
  • • Remove from the oven, knock on the pan, grease the comb with butter while it's still hot.
