Crepe Ingredients

  • 270 gr medium protein flour
  • 30 gr cornstarch
  • 600 ml liquid milk
  • 120 gr sweet thick
  • tsp salt
  • 100 gr melted butter
  • 5 eggs
  • 1/2 tsp vanilla paste
  • Purple, blue, green, yellow, orange and red food coloring.

Cream Ingredients

  • 350 ml liquid milk
  • 100 gr sugar
  • 2 eggs or 4 egg yolks
  • 35 gr cornstarch
  • tsp salt
  • 80 gr sweet thick
  • 30 g butter
  • 150 gr cream cheese / spread cheese
  • 250 gr butter
  • 1 tsp vanilla paste
  • Topping: peanut nougat

How to make

  • 1. For the cream pastry, heat the milk, then in a separate bowl mix the eggs, sugar, cornstarch, salt, and sweetened condensed, mix well
  • 2. Pour the heated milk into the egg mixture, stir, cook again until thickened then add the butter, mix well
  • 3. Transfer to a bowl and cover with plastic wrap, let stand until cool then put in the refrigerator
  • 4. Beat the butter with a mixer until a little pale then add the cream cheese and vanilla paste, mix again
  • 5. Remove the pastry cream and beat with a mixer until soft, mix into the cream cheese, mix again until combined
  • 6. For the mille crepe dough, mix the flour, cornstarch, salt and stir then add the eggs, liquid and sweetened condensed milk, mix well, add melted butter, stir until smooth. Then strain.
  • 7. Divide the dough into 6 equal parts, add coloring to each, mix well.
  • 8. Heat a non-stick pan, I used a diameter of 16 cm, grease it with a little oil. Pour 1 tablespoon of the dough, make a thin omelet. Do it to the end.
