Sweet Potato Chocolate Ingredients

  • 60 gr all-purpose flour
  • 40 gr cocoa powder
  • 65 gr sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 300 gr cassava (sweet potato / yam)
  • 2 large eggs
  • 120 ml simple syrup (3 tablespoons sugar 4 tablespoons water, boil until boiling)
  • 120 ml cooking oil
  • 1 tsp vanilla extract

Frosting

  • 6 tbsp room temperature butter
  • 3 tbsp icing sugar
  • 6 tbsp liquid milk
  • 1 tbsp cocoa powder

Toppings

  • grated cheese / cranberries / according to taste

How to Make Sweet Potato Chocolate

  • 1. Boil / steam / roast cassava until cooked and tender. Peel and mash with a fork. Let it cool.
  • 2. Preheat the oven to 180C from top to bottom. Prepare a round baking tin (22cm), line it with parchment paper.
  • 3. In a bowl, mix flour, cocoa powder, sugar, baking powder and salt.
  • 4. In another bowl, beat the eggs, simple syrup, oil, and vanilla until smooth.
  • 5. Add the egg mixture to the flour mixture. Stir again until the dough is homogeneous / lump-free. Finally, add the cassava. Mix well.
  • 6. Pour the batter into the pan. Smooth the surface. Bake in the oven for 45 – 50 minutes / until the center of the cake is perfectly cooked (do a toothpick test). Turn off the oven. Cool the cake on a wiring rack.
  • 7. Make the frosting. Mix all ingredients in a bowl. Beat with a whisk until smooth and spreadable.
  • 8. When the cake has cooled, spread the frosting evenly. Sprinkle toppings to taste.
