120 ml simple syrup (3 tablespoons sugar 4 tablespoons water, boil until boiling)
120 ml cooking oil
1 tsp vanilla extract
Frosting
6 tbsp room temperature butter
3 tbsp icing sugar
6 tbsp liquid milk
1 tbsp cocoa powder

grated cheese / cranberries / according to taste
How to Make Sweet Potato Chocolate
1. Boil / steam / roast cassava until cooked and tender. Peel and mash with a fork. Let it cool.
2. Preheat the oven to 180C from top to bottom. Prepare a round baking tin (22cm), line it with parchment paper.
3. In a bowl, mix flour, cocoa powder, sugar, baking powder and salt.
4. In another bowl, beat the eggs, simple syrup, oil, and vanilla until smooth.
5. Add the egg mixture to the flour mixture. Stir again until the dough is homogeneous / lump-free. Finally, add the cassava. Mix well.
6. Pour the batter into the pan. Smooth the surface. Bake in the oven for 45 – 50 minutes / until the center of the cake is perfectly cooked (do a toothpick test). Turn off the oven. Cool the cake on a wiring rack.
7. Make the frosting. Mix all ingredients in a bowl. Beat with a whisk until smooth and spreadable.
8. When the cake has cooled, spread the frosting evenly. Sprinkle toppings to taste.
