Ingredients
- – 250 gr high pro flour
- – 20 grams of sugar
- – 6 grams of yeast
- – 1 egg + liquid milk = 140 ml
- – 5 grams of salt
- – 45 gr butter
- – 1 tsp olive oil
How to make
- In a bowl, mix: all dry ingredients, mix well. Pour in the milk and egg mixture, knead until 1/2 smooth. Round it up then put the cover with plastic wrap and rest for 1/2 hour (proofing 1)
- After resting, add butter and salt, knead until smooth and well mixed (I use a hand mixer for 5 minutes). Add olive oil to the dough, knead briefly and then round it. Put the dough into the bowl then cover with plastic wrap (I cover the basin) Rest again for 1 hour (2nd proofing)
- – After 1 hour, the dough will have doubled in size, deflate. Divide into 2 parts. Shape the dough according to taste (I sprinkle the surface of the dough with flour and score). Cover with plastic wrap and rest for 60-75 minutes (final proofing)
- – Oven baguette for the first 15 minutes with a temperature of 200'c then lower the temperature to 180'c and continue to bake for 20 minutes until cooked. (adjust each temperature). This baguette is delicious to eat right away / stay overnight
