Zucchini Brownie Ingredients

  • 200 gr all-purpose flour
  • 50 gr cocoa powder
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder
  • 1 tsp salt
  • 200 ml cooking oil
  • 180 gr sugar
  • 80 gr brown sugar/palm sugar
  • 4 pcs eggs
  • 80 ml yogurt
  • 1 tsp vanilla
  • 300 gr zucchini, grated, squeezed, drained

Frosting

  • 100 gr melted Dark Cooking Chocolate, 3 tablespoons icing sugar, 120 gr room temperature butter, 80 ml cream / liquid milk

How to Make Zucchini Brownie

  • 1. Preheat oven to 180C. Line a baking sheet with parchment paper.
  • 2. In a bowl, mix flour, cocoa powder, baking powder, espresso baking soda, salt, oil, sugar, eggs, yogurt, and vanilla. Mix well with a spatula until a smooth / lump-free dough is formed. Finally add the grated zucchini. Stir well. The dough will be very thick and heavy.
  • 3. Pour the batter into the pan. Smooth the surface. Bake in the preheated oven for 35-45 minutes / until the center of the cake is perfectly cooked (do a toothpick test). Turn off the oven. Cool the cake at room temperature.
  • 4. Make the frosting. Beat all ingredients with a whisk / mixer until thick trails.
  • 5. When the cake is completely cold, spread the frosting on the surface of the cake until it is evenly distributed. Can also be sprinkled with grated cheese, if you like.
