Ingredients

  • 500 grams of peeled pumpkin, steamed and mashed
  • 100 grams of rice flour
  • 100 grams of low protein/all-purpose flour
  • 125 grams of sugar
  • 3 beaten egg yolks
  • 400 ml thick coconut milk
  • Pandan leaves for topping, thinly sliced
  • 1 tsp salt

How to make

  • 1. Mix the eggs, salt and sugar, stir until the sugar is dissolved. Add flour and rice flour, stir until well blended.
  • 2. Add pumpkin, mix well. Pour the coconut milk little by little while stirring until the mixture is well blended.
  • 3. Grease the mud cake mold with a little margarine, pour the dough until it is full. After five minutes add the pandan leaf pieces. Bake on very low heat so the dough doesn't burn too quickly.
  • 4. When it is cooked spread the dough with margarine so that it is young to be lifted.
  • Tips: in addition to the mud cake mold, you can also use a poffertjes mold.
  • Tips: the dough can also be blended so that it is more evenly mixed
