Ingredients for Bika Sweet Potato / Roasted Cassava

  • 800-1kg finely grated cassava
  • 1/2 tsp salt
  • 230gr sugar
  • 2 large eggs, lightly beaten
  • 400ml coconut milk (I use 1/2 coconut blended with 200ml water, strain, blend again with 200ml water, strain. 400ml total)
  • 100gr margarine, melted (mix butter is ok too)
  • 2 tbsp tapioca flour (I used 4 tbsp)
  • enough honey for greasing

How to Make Bika Sweet Potato / Roasted Cassava

  • 1. Beat the eggs and then add all the other ingredients. Stir well . Pour into the pan (I used a size of 20×20). Bake at 180 for 75 minutes.
  • 2. If the top is dry, apply honey ( about 50 minutes) . Don't forget to grill the fire for a while so that the top is crispy. Cut it when it's cold, if it's still hot the cake is still a bit sticky.
