Fried Brains
Material A
- 200 gr mackerel fillet
- 250 gr wheat flour
- 250 hot water
- 1 egg
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp salt
- 1 tsp ground pepper
Material B
- 275 gr sago flour
- 3 stalks spring onion
Sambal Ingredients
- 100 gr roasted peanuts
- 3 cloves of garlic
- 5 pcs cayenne pepper
- 1 tbsp cooking vinegar
- 1/2 tsp salt
- 1 tbsp sugar
- 200 ml water
How to make
- -Mix all ingredients A blend for 30 seconds as long as it's just mixed, transfer to a container then add the spring onions..
- -Stir until smooth, then add the sago flour gradually.. stir until blended
- -round long then boil until it floats
- -fry until brown, remove and drain
- *This recipe can also be used for grilled/steamed brains, wrapped in leaves, moms, the dough is wrapped in leaves and then steamed and then grilled
Chilli sauce
- -Blender fried peanuts until smooth, then mix with spices and water, blend again until smooth then boil
- - add salt, sugar & vinegar, taste test, lift and serve
