Ingredients

  • 300 gr high protein flour
  • 15 gr milk powder (optional)
  • 40 g sugar
  • 210 gr total weighing 2 egg yolks and cold liquid milk
  • 3 g salt
  • 4 g instant yeast
  • 50 gr unsalted butter
  • Stuffing margarine, frozen.

Method

  • - Mix flour, milk powder, sugar & cold liquid milk mixture, stir until half smooth, add instant yeast, knead until well blended and finally add butter & salt
  • - Knead until elastic (passed the windowpane test), remove and let rest 45 minutes - 1 hour, adjusted to room temperature
  • – Weigh the dough according to taste (I divide the dough by 10) round it, let it rest for 10 minutes. Roll, fill & round. Arrange on paper cups.
  • - Let stand until double size, +/- 45 min - 1.5 hours. Spray the TOPPING over the bread in a circle.
  • – Preheat oven to 180°C or according to your oven, oven for 20-25 minutes.
  • Mixer butter & powdered sugar, until fluffy. Add egg whites, mix until well blended. Followed by egg yolks, then liquid coffee.
  • Add flour, mix well with a spatula. Put it in a piping bag.

Coffee Bun Topping Ingredients

  • 60 g butter
  • 60 gr refined sugar
  • 1 egg, separated
  • 3 tsp instant coffee + 2 tsp hot water, mix well
  • 70 gr medium protein flour
