What is Korean Sweet Potato Bread called?

What is Goguma Bread?

Goguma ppang or what is often called Korean sweet potato bread has also become popular with Indonesians during the pandemic. This food rose to fame at the beginning of last year following other Korean foods such as Dalgona Coffee and Korean Garlic Bread.

What Does Purple Sweet Potato Taste?

Regarding taste, purple sweet potato has a variety of flavors such as sweet, slightly sweet, slightly bitter, and bitter. Biologically, purple sweet potatoes and potatoes are still in the same family. The purple color of sweet potatoes occurs because this tuber plant is rich in substances called anthocyanins, which are safe for human consumption.What can purple yam flour be made of? Ingredients

  • 200 gr Tapioca Flour
  • 30 gr White Glutinous Flour
  • 30 gr High Protein Flour
  • 30 gr Refined Sugar
  • 1 Egg, beaten off
  • 2 Tablespoons Corn Syrup
  • 2 Tablespoons Vegetable Oil
  • 90 ml warm liquid milk
  • 50 gr Butter

Stuffing

  • 400 gr Yellow Potatoes, steamed
  • 2 Tablespoons Honey
  • 1/4 Teaspoon Salt

Baluran

  • 100 G Purple Sweet Potato Flour

How to make

  • 1. Mix tapioca flour, white glutinous rice flour and powdered sugar, mix well.
  • 2. Add eggs, corn syrup, vegetable oil, stir with a spatula, add warm liquid milk and knead until smooth.
  • 3. Enter the butter knead until smooth (dough will be soft and sticky), add flour, knead well. Cover the dough with plastic wrap, keep it in the refrigerator for 30 minutes.
  • 4. Mix all the filling ingredients, divide into 12 parts.
  • 5. Divide the skin mixture into 12 parts, take 1 skin dough then flatten it, fill with stuffing, close tightly and form an oval resembling a sweet potato. Place the dough on a tray or plate that has been coated with purple sweet potato flour. Do it until the dough runs out.
  • 6. Roll the dough that has been formed into the purple sweet potato flour until smooth. Arrange on a baking sheet lined with parchment paper. Prick the dough using the blunt end of a toothpick in several places to make it resemble a sweet potato.
  • 7. Bake at 150'C until cooked, about 20 minutes.
  • Note: If there is no corn syrup, it can be replaced with sugar syrup
