In the book Modern Fried Bread by Albertin Hoesni, it is mentioned that fried odading cake uses high and medium protein flour. Protein flour is being used to make the odading soft. while high flour is used so that the odading results expand upwards.
Ingredients
- 100ml warm water
- 4 tbsp Sugar
- 1 tsp instant yeast
- 1 small egg
- 3 tbsp cooking oil
- 250gr wheat flour
- 1/2 tsp Salt
- Cooking oil for frying
How to make
- 1. Stir well warm water and sugar until dissolved. Add yeast and let stand until foamy (+/-10-15minutes). Add eggs, cooking oil and mix well
- 2. In a bowl, mix the flour and salt. Then pour the yeast mixture that has been frothy then "just stir with a spoon" let stand until it expands 2 times (40minutes-2hours)
- 3. Deflate the dough and roll it out on a floured table to form a rectangle then let it rest for 10-20 minutes (if it's denser, you don't need to let it sit anymore, just fry it )
- 4. Cut the dough according to taste.
- 5. Heat the oil and fry on medium low heat until golden brown. Remove and serve warm
