Ontbitjkoek
Ingredients
- 5 eggs
- 2 egg yolks
- 125 gr coconut sugar/palm sugar
- 45 gr sugar
- tsp salt
- 135 gr low protein flour
- 15 gr cornstarch
- 1 tsp cinnamon powder
- 1 tsp nutmeg powder
- 1 tsp ginger powder
- 70 gr melted butter
- Pan D 18/20 cm
- Topping: sliced almonds to taste
How to make
- 1. Mix dry ingredients flour, cornstarch, cinnamon, nutmeg, ginger then sift, set aside
- 2. In a bowl, beat the eggs briefly until frothy, then add the salt and sugar little by little, beat on high speed until thick (until a crest forms when the whisk is removed), the total time is about 15 minutes
- 3. Lower the speed to a low speed, add the sifted dry ingredients, alternating with melted butter, ending with the flour, stir until thoroughly mixed (don't overmix), make sure there is no butter that settles to the bottom of the dough.
- 4. Pour into a baking dish that has been greased with butter and flour and lined with baking paper, then sprinkle with almond topping (with a thick dough, the almonds will not sink)
- 5. Bake in preheat oven at 160⁰ C for 35-40 minutes on top and bottom fire
- 6. Test with a skewer, cooked, immediately remove from the oven, then remove from the pan. Ready to serve..
