250 grams of grated coconut, only the white part is grated
1 tbsp sugar
Sufficient salt and flavoring
Enough cooking oil
Ground spices
6 cloves of red onion
3 cloves of garlic
3 cm kencur
1 tsp coriander powder
4 red chilies
Step
1. Wash the glutinous rice 3 times, then soak for at least 1 hour (I used 2.5 hours). After that wash again as much as 1 time then drain.
2. In a saucepan, add the glutinous rice, pandan leaves, salt and liquid coconut milk. Stir well and cook until the coconut milk shrinks and the sticky rice is half cooked.
3. After shrinking, transfer the sticky rice to the preheated steaming pan. Then steam until cooked.
4. When it is cooked, remove the sticky rice and transfer it to a tray. Leave to cool.
5. While waiting for the sticky rice to cool, make the serundeng first. Saute ground spices until fragrant then add grated coconut. Season with sugar, salt and seasoning. Cook until it dries and the spices absorb. Then transfer to a container.
6. After the sticky rice is cold, shape it into rounds using plastic gloves.
7. Then roll it into the container containing the serundeng until all surfaces are covered. Serundeng sticky rice is ready to be enjoyed
