Choux Vla Fruit
Leather
- 135 gr High Pro Flour(Chakra)
- 100 gr Butter
- 250 ml UHT Milk
- Pinch of Salt
- 1 tbsp sugar
- 3 eggs
Material Vla
- 2 egg yolks
- 30 gr cornstarch
- 20 gr wheat flour
- 350 ml UHT Milk
- 75 gr sugar
- 1 tsp Vanilla
- 1/2 tsp Salt
- 25 g Butter
- Colatta Glaze Cappuccino
- Colatta Glaze Banana Milk
Steps to Create Vla
- 1. Heat UHT Milk, don't let it boil, remove and set aside
- 2. Enter the eggs, sugar, vanilla, salt, flour, cornstarch in a bowl, stir
- 3. Then pour the whole milk into it, then pour it into the pan, cook until thick and bubbling, add the butter, stir again, and remove, strain, cover with plastic opening, store in the refrigerator
Steps to Make Skin
- 1. Put the milk and butter, salt in a saucepan, cook until it boils, then reduce the heat to the stove
- 2. Add flour, mix well
- 3. Then take it out, let it cool a bit
- 4. Enter the egg 1/1 while stirring
- 5. Put the dough in a plastic triangle
- 6. Prepare a cup tin, which has been smeared with butter, spray the dough (can be seen in the video)
- 7. Bake for 35 minutes, temperature 175c until cooked, remove
Solution
- 1. The cold vla, give various variants of the Colatta Glaze flavor from @cokelatcolatta, mix well, then strain
- 2. Add 75 gr of Whipp Cream powder with 125 ml of ice water, then mix until stiff
- 3. Mix the VLA with the whipp cream ingredients, stir until smooth, the VLA is ready to use
