Bread Dough Ingredients

  • 300 gr high protein flour
  • 75 gr medium protein flour
  • 60 g sugar
  • 6 gr/ 1.5 tsp baker's yeast (fermipan, mauripan etc.)
  • 1/3 tsp bread improver (you don't have to use it either)
  • 1 whole egg
  • 40 gr sweetened condensed milk (1 sachet)
  • 150 ml ice water
  • 1/2 tsp salt
  • 45 gr margarine

Milk Cheese Filling Ingredients

  • 100 gr medium protein flour, roasted until light, let cool
  • 100 gr cheddar cheese, grated
  • 75 g granulated sugar
  • 40 gr margarine
  • 40 gr skim

Method

  • Make the filling first: mix the flour, grated cheese and sugar well. Add SKM and margarine. Mix well until the texture is gritty. set aside
  • Continue with bread dough: mix all dry ingredients well. Add water and eggs. Knead until well blended. Add margarine and salt. Knead until elastic can be done manually or using a mixer. Round the dough. Rest for 10 minutes, then divide into several circles ( I made 26 circles @ 43 gr). Fill each circle with the prepared filling. Arrange in a baking dish (I used a 22×7 cm square pan). Rest until it expands almost 3 times. Spray the surface with water, sprinkle with toppings of your choice or leave plain. Bake until cooked and golden brown. Remove from the oven and brush the surface with butter/margarine.
