What is Lotus Biscoff Cake?
Quoted from the official lotus biscoff website, these biscuits were first made by a Belgian baker named Jan Boone sr. In 1932, Boone had the idea of making Speculos Caramel Biscuits with natural ingredients. he named the biscuit as lotus after the lotus flower meaning pure.
What Is Biscoff Jam Made Of?
Lotus biscoff spread is a jam made from mashed biscoff biscuits. The caramel taste of the biscoff biscuit and the fragrant butter make this jam very popular with many people.
Ingredients
- 300gr butter
- 175gr brown sugar
- 300gr Kunci Biru wheat flour @kreasibogasari
- 150gr Biscoff Jam
- 1 tsp vanilla
- 6 large eggs (300gr)
- A little salt
- 2 tsp baking powder
How to make
- 1. Mix the butter and sugar until smooth
- 2. Add the biscoff jam and mix until it expands
- 3. Enter the eggs one by one, mix until smooth
- 4. Enter the Kunci Biru @kreasibogasari flour which has been mixed with baking powder and salt (while sifting), and fold it using a spatula, as long as it's smooth (don't take too long)
- 5. Pour the batter into 2 18cm tins, bake in the preheated oven at 180⁰C for 45-60 minutes (check skewers)
Biscoff Cream
- 300gr whip cream powder
- 600ml ice water
- 175gr Biscoff Jam
- 3 tablespoons sweetened condensed milk (to taste)
Method
- Mixer Whipcream Powder And Water Until Well Mixed, Enter The Rest Of The Ingredients, Mixer Until Expanded
Solution
- Cut each cake into 2 parts, put cream on the surface of the cake, stack it with cake and add cream
- do it until the last layer, coat the entire cake with cream and flatten, decorate according to taste.
