Ingredients

  • 225 gr high protein flour
  • 7 g powdered milk
  • 25 gr sugar
  • 3 g instant yeast
  • 155 gr cold full cream milk
  • 2 g salt
  • 20 gr butter
  • Pandan paste to taste
  • Mocha coffee paste to taste

How to make

  • 1. Mix all ingredients except salt and butter. Knead until 1/2 smooth.
  • 2. Add salt and butter, knead until elastic (test windowpane).
  • 3. Divide the dough into 4, 2 parts white, 1 part add pandan paste, 1 part mocha coffee paste.
  • 4. Let stand until doubled.
  • 5. Deflate the dough, divide each dough into 8, round it.
  • 6. Put 2 pieces of each color into the tin (so each tin has 6 rounds).
  • 7. Cover the pan, let it rest for 1 hour.
  • 8. Preheat the oven to 180°C, bake the bread for 20-25 minutes.
  • Notes:
  • Mini size 8 x 8 x 7 cm
  • The total dough is about 440 grams, so each pan is 110 grams
