70-80 ml cold fresh milk (feels right to stop) / cold water
30 gr margarine
50 gr sugar
1½ tsp active yeast
10 grams of powdered milk
pinch of salt
Topping Ingredients
250 gr white sesame
Black sesame to taste
1 whole egg beaten off for dipping
You can use water but the sesame won't stick perfectly when fried, a lot of it comes off
How to make
1. Steam the potatoes, blend together with milk / when warm, knead directly
2. Mix mashed potatoes with flour, egg yolks, yeast, sugar, milk powder, knead until half smooth, add margarine, salt, knead / mixer until smooth
3. Rest for 15 minutes
4. Deflate the dough, weigh the dough 40-50gr, adjust to taste, round the dough until the surface is smooth, store in a baking sheet that has been dusted with flour, so it doesn't stick
5. Rest up to 25 minutes
6. Flatten the dough using 3 middle fingers, make a hole in the center of the donut with a syringe (don't forget to add the flour, so it doesn't stick)
7. Rest for 25 minutes
8. Dip into egg, roll in sesame seeds until smooth. Fry using solid oil (so that the results are dry and not greasy) or regular oil, use a flat Teflon frying pan, turning once so that the donuts are not greasy, remove and drain.
