200 grams of powdered sugar/caster sugar (me: 190gr)
5 eggs (4 if the eggs are extra large)
1 tsp vanilla
225 grams of medium/low protein flour
1 tsp baking powder
A little salt
50 ml liquid milk, room temperature
2 tablespoons cocoa powder, dissolve in a little hot water to make a paste, let it cool – you can add chocolate paste if you like (me: add 1 tsp mocca paste)
How to make
1. Grease the pan with butter or margarine. If using a loaf pan, line it with parchment paper. Set aside.
2. Beat butter using a mixer on high speed until smooth. Add powdered sugar/caster sugar. Beat again until fluffy, pale & creamy. Do not overbeat until the butter becomes a little runny.
3. Add in the vanilla & eggs one by one. Always beat well with a mixer every time you add eggs. Occasionally scrape the edges & bottom of the basin using a spatula.
4. Preheat the oven to 160C
5. Mix & sift flour, baking powder & salt. Add flour 3 times into the butter mixture, alternating with the liquid milk 2 times. Beat using a mixer on the lowest speed. Finally, stir with a spatula.
6. Take a third of the dough. Add the chocolate paste solution. Mix well with a spatula.
7. Pour the mixture alternately in the pan. Make a random marble motif with chopsticks/sticks. Kick the pan.
8. Bake for 45-60 minutes depending on the oven and baking sheet used. The skewer test is clean.
