Material A

  • 10 egg yolks
  • 80 gr granulated/refined sugar
  • 1/2 tsp vanilla extract

Material B

  • 30 g low protein flour
  • 1 tbsp milk powder
  • 1/2 tsp cornstarch

Material C

  • 145 Gr Salted Butter

Toppings

  • Prunes, flatten
  • Sweet thick cream to taste

How to make

  • 1. Mix ingredients A on high speed (about +-10 minutes) until fluffy, thick with traces
  • 2. Lower the mixer speed. Add ingredients B. Beat well, set aside.
  • 3. Mix ingredients C on high speed until fluffy (about +-10 minutes). Add it to the egg mixture. Mix well with a spatula.
  • 5. Divide the dough into 2, I use a 25 x 30 cm tin that has been smeared with margarine and lined with parchment paper. Pour 1 part of the dough and top with prunes.
  • 6. Oven at 200°c lower heat for 3 minutes, then top heat for 5 – 8 minutes until golden. Adjust each oven.
  • 7. Once cooked, turn the tin, remove it from the mold, remove the paper and spread it thinly, roll it up and press it tightly.
  • 8. Continue for the second dough, do the same thing as the first dough.
  • 9. Completion, line up the first dough that has been rolled right at the end, connect and roll it with the second dough that has been smeared sweetly, compact. Cut to taste.
