Ombre Steamed Sponge Bloom
Ingredients
- 2 eggs
- 180 gr sugar
- 1 tsp vanilla powder
- 215 gr all-purpose flour
- 25 g milk powder
- tsp baking powder
- 125 ml sparkling water
- tsp emulsifier (SP)
How to make
- In a bowl, mix all ingredients except SP, mixer on high for 5 minutes, add SP, mixer again for about 10-15 minutes until thick white dough trails.
- Divide the dough according to taste, here mamak made 4 ombre colors.
- Pour into the mold, make the motif according to your taste (for this ombre motif, you can see the video on slide 3) until it fills the mold
- Steam for 12 minutes, over high heat,
- It's done, pick it up right away. Cool and ready to serve

- 1. Make sure the texture of the dough should be thick white with traces (I like to use the SP technique, given it in later, it will thicken faster)
- 2. Pour the dough until the mold is full
- 3. The steamer must be really hot and steamy when adding the dough
- 4. Just a little steaming water, so that it doesn't wet the bottom of the mold which will make it tough later
- 5. And don't forget to cover the steamed pot with a cloth
