Moringa Cheese Muffin

Material A (Wet)

  • 2 medium size eggs
  • 150 gr granulated sugar
  • 250 ml liquid milk + 1 tbsp lemon juice/vinegar (buttermilk)
  • 40 g melted butter
  • 40 g vegetable oil
  • 1 tsp vanilla paste

Ingredients B (Dry) Sift, set aside

  • 300 gr low protein flour
  • 2 tbsp moringa powder
  • tsp cardamom powder (optional)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • tsp salt

Material C

  • 150 Diced Cheddar Cheese

How to make

  • 1. Mix all the ingredients A in a bowl, then pour half of the ingredients B, stir, then put the rest of the ingredients B back in, stir again.
  • 2. Enter the pieces of cheese into the dough (reserving a little for the topping), then stir again, do not need to stir too long.
  • 3. Keep it in the chiller for 30 minutes
  • 4. Preheat oven at 180⁰ C for 15 minutes
  • 5. Pour the batter into the tin, then bake at 180⁰C on top and bottom for 17-20 minutes
  • 6. Once cooked, remove from the oven.
  • Ready to be served

Note

  • • The amount of granulated sugar can be added if it's not sweet enough
  • • if you want a greener color, you can add 1 tablespoon of thick pandan sediment, it will smell more fragrant too
