1. In a bowl, mix flour, sugar, yeast, eggs and water. Knead briefly. Add salt and butter. Knead until smooth and elastic. Round the dough.
2. Grease the kneading bowl with a little oil. Place the dough in the container. Cover and keep in a warm place 90 minutes / until the dough has doubled in size.
3. Deflate the dough. Roll out a thin rectangle using a rolling pin. Put the filling in the middle of the dough, up to a 2 cm limit on each side.
4. Roll the dough like a Swiss roll. Slice the center vertically, with the filling facing up. Make a braid (cf. step-by-step ️).
5. Line a loaf pan with parchment paper. Carefully remove the dough and place it in the pan. Closed. Leave for second proofing at room temperature for 60 minutes until the dough expands.
6. Bake in a preheated 190°C oven for 25-30 minutes until the bread is cooked through and slightly puffy when tapped. Turn off the oven.
7. While the babka is still warm, pour in the simple syrup (ready to use — optional) until it thickens. Then spread melted butter. Allow to cool completely before cutting.
