Peanut Butter Babka

peanut butter babka

Bread Dough Ingredients

  • 280 gr all-purpose flour
  • 50 gr sugar
  • 7 g instant yeast
  • 2 eggs
  • 60 ml water
  • 1/2 tsp salt
  • 60 gr butter, room temperature
  • A little oil to grease the pan

Filling

  • Enough Peanut Butter

Spread

  • Liquid Butter, Simple Syrup (Ready to Use)

How to make

  • 1. In a bowl, mix flour, sugar, yeast, eggs and water. Knead briefly. Add salt and butter. Knead until smooth and elastic. Round the dough.
  • 2. Grease the kneading bowl with a little oil. Place the dough in the container. Cover and keep in a warm place 90 minutes / until the dough has doubled in size.
  • 3. Deflate the dough. Roll out a thin rectangle using a rolling pin. Put the filling in the middle of the dough, up to a 2 cm limit on each side.
  • 4. Roll the dough like a Swiss roll. Slice the center vertically, with the filling facing up. Make a braid (cf. step-by-step ️).
  • 5. Line a loaf pan with parchment paper. Carefully remove the dough and place it in the pan. Closed. Leave for second proofing at room temperature for 60 minutes until the dough expands.
  • 6. Bake in a preheated 190°C oven for 25-30 minutes until the bread is cooked through and slightly puffy when tapped. Turn off the oven.
  • 7. While the babka is still warm, pour in the simple syrup (ready to use — optional) until it thickens. Then spread melted butter. Allow to cool completely before cutting.
