Thousand Layers Pia
Green Bean Filling Ingredients
- 100 gr peeled green peas, soak for 1 hour
- 80 gr sugar (adjust to taste)
- 1/4 tsp Salt
- 90 ml thick coconut milk
- 1 lb pandan leaves
How to make
- 1. Steam the green beans until cooked
- 2. Boil coconut milk, sugar, salt & pandan leaves, stir constantly until it boils. Remove & chill
- 3. Mix green beans with coconut milk, then blend until smooth.
- 4. Pour in Teflon, add pandan leaves, then cook while stirring until smooth. Remove and cool. Round shape weighing @ 23gr. set aside
Pia skin
- 115 gr medium protein flour
- 35 gr white butter
- 15 g of powdered sugar
- 55 ml Ice water
- 5 drops Vinegar
Water Dough
- 100 gr medium protein flour
- 60 gr white butter
- Food coloring (sy) yellow, purple, pandan paste and blue
Fat Dough
- 1. Water Dough: mix cold water & 5 drops of vinegar.
- Then in another bowl, mix flour & powdered sugar, mix well. Add white butter, mix well. Add ice water little by little while kneading evenly. Round, wrap with plastic wrap. Leave it for 30 minutes.
- 2. Fat Ingredients: mix & knead both ingredients until well blended. Round & wrap with plastic wrap, let stand for 30 minutes. Divide the dough into 4 parts, add each color, knead until smooth. From each color, divide again into 6 parts, round.
- 3. Divide the water mixture into 6 parts, round. Take 1 part, flatten. Add each of the four colors of the fat mixture. Wrap & round, do it until all the dough runs out.
- 4. Take 1 part of the dough, roll it thin and then roll it sideways. Roll thin again lengthwise, roll. Cut into 2 parts, each thinly roll, add the filling then cover & seal, arrange in a baking dish
- 5. Bake in the preheated oven at 170'C for 27 minutes.
