What are the Ingredients for Old School Curry?
The ingredients for the old school sugar recipe are 10 tablespoons of granulated sugar. 2 teaspoons lemon juice. 250 ml of water. blue food coloring.
Ingredients
- 5 tbsp sugar
- 4 tbsp water
- 0.5 gr citron / 1/3 tsp lime juice
- 100 gr glutinous rice flour (roasted with pandan leaves over low heat until it feels light and the pandan leaves look dry)
- 1 drop of food coloring
How to make
- * Mix water, sugar and citron into a non-stick pan, mix well. Cook over medium low heat, until the sugar dissolves and starts to foam.
- Reduce the heat, cook, stirring occasionally, until thick, foamy tightly and the color turns yellowish. Approximately about 5 minutes. Turn off the fire
- * stir continuously until the foam disappears, place / pour on a non-stick mat (silmat), add food coloring, stir until smooth using chopsticks, stir constantly until the texture is solid and can be taken
- * take the sugar that has been solid, make a hole in the middle, put it on the glutinous rice flour that has been roasted, coat it evenly with flour
- * Pull gently so that it forms a hole that is wide enough, shaped like a figure 8, then cup it, then coat it again with flour. Do it repeatedly until it is thin like thread / hair.
- * Shake off excess flour that sticks before consumption.
Note
- * make sure when you lift it, the thickness of the cotton candy is right... because if it's runny it will break easily when you pull it out, and if it's too thick or too long to cook, apart from making the texture hard, it's difficult to pull it out and it will have a slightly bitter taste. Therefore, the fire should not be large so that it does not burn quickly.
- * The way to check whether the thickness is right is by:
- pour a drop of #sugar into cold water,
- * If it sets right away, it's solid, but when you hold it, it feels flexible to form, it means it's right.
- * If you put it in the sugary water, it's certain that it's not ready yet… it needs to be cooked a little more
- * And if when you pour it into water, the sugar will set right away, but if you hold it hard, it means that it has been cooked for a long time, it won't be able to be pulled out or it will be difficult to pull it out.
