Pistachio Cheesecake
Crust Material
- 140 gr Oreo biscuits, puree
- 100 gr butter, melted
Filling
- 500 gr cream cheese, room temperature
- 150 gr sour cream
- 150 gr whipping cream
- 150 gr sugar
- 4 eggs
- 100 gr pistachio nuts, puree in a food processor
Toppings
- Chopped pistachios, fresh berries / to taste
How to make
- 1. Preheat oven to 150C. Line a round baking pan (22 cm) with parchment paper.
- 2. Make the crust. Mix Oreos and melted butter in a bowl. Then put it in the bottom of the pan until it is even and dense. Store in the refrigerator.
- 3. In a large bowl, mix cream cheese, sugar, sour cream, and whipping cream. Mix until smooth. Add the eggs one at a time while still mixing until well blended and smooth. Finally, add the finely chopped pistachio nuts. Stir with a spatula until well blended.
- 4. Take the pan from the refrigerator. Put the filling material into the pan. Smooth the surface.
- 5. Bake in the oven for 50-60 minutes on top and bottom until the surface of the cheesecake is cooked and set. Turn off the oven. Open the oven door slightly; block it with a wooden knife. Leave the cheesecake in the oven for 30 minutes.
- 6. Remove the cheesecake from the oven. Let it cool completely. Store in the refrigerator at least 2 hours before serving, so that the cheesecake really sets.
- 7. Carefully remove the cheesecake from the pan. Place on a serving plate. Add toppings according to taste.
