Young Coconut Brown Sugar Pudding

Layer Material 1

  • 1 young coconut, scrape the contents
  • Separate young coconuts and water.
  • 400ml water
  • 350ml young coconut water
  • 150gr brown sugar/palm sugar
  • 1 pack of agar2 swallow plain
  • 2 tbsp sugar
  • pinch of salt

How to Create Layer 1

  • Cook all ingredients except young coconut meat until it boils. Strain.
  • Wet the pudding mold, arrange the young coconut meat.
  • Pour the agar2 after the steam is gone into the mould.

Layer Material 2

  • 750ml water
  • 150gr brown sugar/palm sugar, comb
  • 2 tbsp sugar
  • 1 egg, beaten
  • 65 ml instant coconut milk
  • 1 pack of agar2 swallow plain
  • 2 pandan leaves, tie
  • pinch of salt

How to Create Layer 2

  • Cook some water with brown sugar, sugar and salt. Strain so that there are no impurities.
  • add agar2 powder, eggs, coconut milk and the rest of the water and pandan leaves. Cook until boiling while stirring to produce a smooth moss texture.
  • After boiling, wait a while until the pudding is slightly warm and thick. Pour over layer 1 which has been half set slowly. Cool and store in the refrigerator until set.
