Old-school Polished Bread
Bread Ingredients
- – 225 grams of high pro flour
- – 15 grams of powdered milk
- – 10 gr cocoa powder
- – 50 grams of sugar
- – 4 grams of instant yeast
- – 1 egg + liquid milk = 160 ml
- – 45 gr butter
- – 1/2 tsp salt
Spread Cream (Mixer Until Soft)
- – 75 gr margarine blueband
- – 25 grams of powdered sugar
- - 1 tablespoon sweet thick
- – 3 tts of mocha paste (I use toffieco)
- Complementary Meses Ceres to taste
How to make
- - Mix dry ingredients + sugar, stir. Pour in the egg mixture, stir while lightly kneading to mix well. Close the basin, keep it for at least 8 hours
- - The next morning, mix yeast + 1 tablespoon warm water, stir until it becomes a thick paste, add it to the dough. Mixer for a while
- - Add butter and salt. Mixer enough 5-7 minutes until smooth. Round the dough, rest until it rises 2x (sy 45 minutes)
- – After expanding, deflate the dough, divide the dough @ 40 gr. Round and then rest again for 30 minutes.
- – Oven for 15-20 minutes at 180 (adjust to each oven). Turn off the fire
- - Once cooked, brush the surface of the bread with butter / margarine. chill
- - After the bread is cold, split the middle, spread the cream, sprinkle with the meises.
