Basic Chocolate Sponge Cake

Ingredients

  • 3 eggs
  • 100 gr granulated sugar
  • 1 tsp Emulsifier
  • 80 gr Medium Protein Flour
  • 20 gr cornstarch
  • 10 gr Cocoa Powder
  • 40 ml Liquid Milk
  • 50 gr Margarine Melt
  • 1 tsp Chocolate Paste

How to make

  • 1. Beat eggs, sugar, emulsifier until fluffy, white, thick with traces.
  • 2. Lower the speed of the mixer, gradually add the flour, cornstarch, cocoa powder mixture, beat well on low speed.
  • 3. Turn off the mixer, add the liquid milk + chocolate paste gradually, stir again with a spatula.
  • 4. Finally add melted margarine, stir with a spatula until blended. Do not let any margarine settle.
  • 5. Pour into a round pan that has been smeared with thin margarine and lined with parchment paper. Gently tap the pan to remove any trapped air.
  • 6. Bake at 180'C for 25-30 minutes, depending on your oven. Once cooked remove from the pan, cool on a cooling rack.
