Mocca Steamed Sponge Ingredients

  • 2 eggs
  • 175-200 gr granulated sugar
  • 200 gr low protein flour (key)
  • 125 ml sparkling water
  • 1 tsp vanilla paste
  • 1/2 tsp rum (optional)
  • 1 tsp SP/emulsifer
  • Mocha pasta to taste

How to Make Mocca Steamed Sponge

  • 1. Mix all ingredients together except SP, mixer on medium to high speed for 5 minutes, add SP mixer again for 10 minutes at medium to high speed (15 minutes in total)
  • 2. Divide the dough & ksh coloring / paste according to taste
  • 3. After all the color is given, enter it into the piping bag
  • 4. Prepare a steamed sponge cake tin and paper cup, fill the dough until it's full
  • Heat the steamer until it's very steamy, put in the pan, don't be too close to let it grow well, steam for 10-15 minutes over high heat, during steaming the lid of the steamer can't be opened, and the lid of the steamer must be covered with cloth so that the steam doesn't drip on the sponge. (I didn't cover the cloth because my steamer was short)
