- 200 gr super ripe banana, weighed after peeling (I use Ambon banana)
- 250 g margarine mix butter or can be full margarine, just according to taste
- 75 gr palm sugar 75 gr fine granulated sugar (I use dry blended sugar) or can be full granulated sugar
- 5 egg yolks
- 5 egg whites 2 tbsp muncung granulated sugar
- 1/4 tsp cream of tar or 1 tsp lime juice (optional)
- 200 g flour
- 25 g milk powder
- 1/2 tsp baking powder
How to Make Banana Butter Cake
- Prepare all the ingredients. Sift flour, milk powder and baking powder. Set aside.
- Mash the bananas with a fork. set aside
- Prepare a 22-24 cm diameter baking dish, grease with margarine then sprinkle lightly with flour or smear with Carlo (I smeared Carlo KW: 1 tsp margarine 1 tsp oil 1 tsp flour mix well)
- Preheat the oven on medium heat
- Beat margarine/butter with sugar until pale and creamy. Add the egg yolks one at a time, beat until thoroughly combined. Add bananas, mix well. Lower the speed to the lowest speed, add the dry ingredients, beat until just combined. Don't over mix. Turn off the mixer.
- Clean the mixer feet from the dough. Wash and dry until completely dry. In a separate bowl, beat the egg whites with 2 tablespoons of sugar and cream of tar until soft peaks (egg whites look soft and shiny, and stiff when you lift the mixer foot)
- Mix the egg whites with the egg yolk mixture in 3 stages. Stir gently with a spatula or whisk, just until combined. Don't stir too hard and don't over mix.
- Pour the batter into the tin, tapping the tin to remove air bubbles in the batter. Bake until done.
