- 250 gr high protein flour (I use full whole wheat)
– 30 grams of sugar
– 65 gr (1 egg + 1 egg yolk)
- 100 gr cold liquid milk
– 4 grams of instant yeast
– 80 gr unsalted butter
– 5 grams of salt

How to make
– In a bowl mix together: whole wheat flour, sugar, eggs, yeast. Knead with a mixer for 8-10 minutes until smooth
- Add salt followed by butter. Continue kneading until elastic (windowpane)
- Let stand at room temperature for 1 hour. Then enter the chiller for 12-16 hours (overnight)
– Preshape, weigh the dough into several equal parts (I divided it into 9 parts). Rest for 15 minutes
– Round the dough, let stand for 1.5 – 2 hours
- Preheat the oven to 180'c. Brush the surface of the dough with egg white, then sprinkle with the white sesame & chiaseeds mixture. Oven for 15 minutes (adjust the temperature)
