500 g sweet potato (net weight after steaming and peeling)
80 g cornstarch
30 g rice flour
2 tbsp sugar or to taste
pinch of salt
1/2 tbsp margarine
1/2 tsp vanilla powder
1/2 tsp baking powder
1 small piece of brown sugar finely sliced
Method
- Wash the sweet potato, steam it until soft, peel and mash it. Put all the remaining ingredients (except brown sugar) into the sweet potato.
- Mix well and knead lightly until it becomes a dough that can be formed.
- Take 1 tablespoon of sweet potato mixture, shape it into a round, flatten it then fill the middle with brown sugar. Round it back until it is smooth and neat.
– If you don't want the cake to be squishy, don't let it leak. So that when it's fried, the sugar doesn't come out and stick to the cake.
- Fry in psnas oil on low heat until golden yellow and the outside is firm so that when it is removed from the oil it doesn't wrinkle.
