What is Karpatka Cake?

Delicious Polish Karpatka Cake Recipe. This cake from Poland is a combination of thin cakes from the smoothest layer of milk dough and custard dough. This cake is quite popular in Poland, usually served during special events, simple gatherings with family or just regular tea.

What is Polish Cake?

Karpatka cake is one of the most popular Polish cakes. In one bite of this cake, the audience will feel the crunch and softness at the same time. The name Karpatka is taken from the name of the mountains in Poland, namely the Carpathian Mountains.

Leather/choux

  • 200 ml of water (I mix it with 100 ml of milk)
  • 100 gr butter/margarine
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 125 gr flour
  • 3 large eggs
  • 2 tsp cocoa powder

How to Make Skin

  • 1. Heat water/milk, butter, sugar, salt in a non-stick pan until it boils
  • 2. Enter the flour, mix well using a wooden spoon, stir until smooth. Turn off the fire, cool down
  • 3. After it is warm, it tends to cool, add the eggs one by one while mixing, until well mixed
  • 4. Divide the dough into 2, then put each in a piping bag
  • 5. Prepare 2 round pans measuring 18cm (me: 20cm) by rubbing margarine, then spraying the dough onto both pans
  • 6. Oven at 170 for about 20 minutes or according to your oven. During the oven process, don't open the oven lid ok?

Custard/filling ingredients

  • 500 ml liquid milk
  • 120 g sugar
  • 1/4 tsp salt
  • 2 egg yolks (I skipped, because I prefer lighter fillings 🙏)
  • 40 gr cornstarch (sya 50)
  • 2 tsp vanilla extract
  • 150 gr room temperature butter

How to Make Custard

  • 1. Stir together all the custard ingredients in a sauce pan (uncooked condition over the fire)
  • 2. After mixed well, turn on the fire, cook until it boils
  • 3. Cool the custard, cover with cling wrap until the custard surface is covered. Put it in the fridge
  • 4. Once cool, mix custard with butter, mixer until well blended

Solution

  • Take 1 piece of choux skin, put it in a round pan the same size as the choux, give the custard filling, cover / stack with the other choux skin.
  • Cover tightly with cling wrap, put in the fridge overnight
  • Delicious eaten cold ❤️
