Ingredients

  • 185 g butter, room temperature
  • 180 gr castor sugar (fine granulated sugar)
  • 4 eggs
  • 250 gr all-purpose flour
  • 1 tsp salt
  • 1.5 tsp baking powder
  • 200 gr super ripe banana
  • 150 gr fresh blueberries, mashed with a fork
  • Toppings: 2 ripe bananas, sliced ​​round, 80 gr of fresh blueberries

How to make

  • 1. Preheat the oven to 175°C. Line a round baking pan (22cm) with parchment paper. Mash 200 gr banana.
  • 2. Container I: mix flour, salt, and baking powder.
  • 3. Container II: with mixer on high speed, beat butter and sugar until pale and fluffy. Add the eggs one at a time while still beating on low speed until it becomes a homogeneous mixture. Add the mashed bananas and blueberries. Stir well.
  • 4. Add the flour mixture to the egg mixture. Mix with a spatula until a homogeneous, lump-free dough is formed. The dough will be very thick and stiff.
  • 5. Pour the batter into the pan. Smooth the surface. Arrange the topping ingredients on it. Bake in the oven for 45-50 minutes until the center of the cake is perfectly cooked (do a toothpick test). Turn off the oven.
  • 6. Leave the cake on the baking sheet at room temperature. Cut and serve when the cake is cool enough.
