Banjar Rice Layer

White Coating Material

  • 2 eggs
  • 60 gr rice flour
  • 80 gr sugar
  • 1 tbsp flour
  • 2 tbsp white skim
  • 300 ml thick coconut milk

Chocolate Coating Material

  • 2 eggs
  • 60 gr rice flour
  • 80 gr sugar
  • 1 tbsp flour
  • 1 tbsp cocoa powder
  • 2 tbsp chocolate
  • 300 ml thick coconut milk

Method

  • • Boil coconut milk until boiling, cool.
  • • Prepare a steamer and a brownie pan uk 21x9x5, grease it with oil (I was given food grade plastic, you can also use banana leaves)
  • • Mix all the white layer ingredients, until the dough is smooth without lumps, do the same with the chocolate layer. (See video)
  • • Steam the first 100 ml white layer for 3 minutes, then the chocolate mixture, do this until the dough runs out, the last layer of chocolate and steam again for another 20 minutes, then let it cool and then remove it from the pan. Cut and serve
  • Nb: 1 tablespoon margarine when melted becomes 2 tablespoons liquid margarine, so for this recipe you just need to use 1 tablespoon of margarine to coat the white and chocolate
