English Fruit Cake
Ingredients
- – 200 gr butter
- – 200 gr fine granulated sugar
- – 4 eggs
- – 125 grams of low protein flour
- – 2 tbsp milk powder
- – 1/2 tsp BP
- – 1 tsp munjung speck seasoning
- – 1/2 tsp cinnamon powder
- – 300 gr mixture of dried fruit + nuts (I use: red cherries, green cherries, Sukade, raisins, almond slices)
- - Enough flour for coating
- – 1 small pack of apple juice
How to make
- – In a bowl, mix various dried fruit & almonds, add apple juice. Stir well, let stand at least 3 hours. set aside
- – In another bowl, beat the sugar & butter until fluffy and white, add 1/1 egg while continuing to beat until fluffy
- – Sift: flour + milk powder + baking powder)
- - After the egg mixture has risen, add the flour mixture little by little. Beat on low speed until smooth. Turn off the mixer
- - Drain the fruit mixture that has been soaked in apple juice. Lightly coat with flour
- - Enter the fruit mixture into the dough, mix well
- - Pour the dough mixture into a baking sheet that has been lined with baking paper (I pour some into a papercup)
- – oven for 35-40 minutes at 180'c (adjust to each oven)
