Hong Kong Cheese Sponge
Ingredients
- 4 Egg Yolks
- 30 g granulated sugar small
- 1 tsp SP
- 1 tbsp Liquid Milk
- 1/4 tsp Vanilla Essence
- 4 egg whites
- 1/4 tsp Salt
- 1 tbsp lime juice
- 50 gr fine granulated sugar
- 60 gr Key Flour
- 10 gr cornstarch
- 1/2 tsp Baking Powder
- 30 gr grated Cheddar Cheese
- 50 gr Butter/margarine, melted
Toppings
- Grated Cheddar Cheese &Amp; Almonds. .
Method
- 1) Beat egg yolks, SP & sugar until thick. Add liquid milk & vanilla essence, beat until smooth.
- 2) Beat egg whites, salt & lime juice until foamy, add sugar gradually, beat until stiff peaks expand. Then add the egg yolks while beating on a low speed.
- 3) Add flour, cornstarch & baking powder while sifting and stirring slowly. Add grated cheddar cheese. Stir well.
- 4) Add melted butter, mix well with a spatula
- 5) Pour into cup, sprinkle with grated cheese & almond topping.
- 6) Bake at 180°C for about 25-30 minutes or until cooked.
