Hong Kong Cheese Sponge

Ingredients

  • 4 Egg Yolks
  • 30 g granulated sugar small
  • 1 tsp SP
  • 1 tbsp Liquid Milk
  • 1/4 tsp Vanilla Essence
  • 4 egg whites
  • 1/4 tsp Salt
  • 1 tbsp lime juice
  • 50 gr fine granulated sugar
  • 60 gr Key Flour
  • 10 gr cornstarch
  • 1/2 tsp Baking Powder
  • 30 gr grated Cheddar Cheese
  • 50 gr Butter/margarine, melted

Toppings

  • Grated Cheddar Cheese &Amp; Almonds. .

Method

  • 1) Beat egg yolks, SP & sugar until thick. Add liquid milk & vanilla essence, beat until smooth.
  • 2) Beat egg whites, salt & lime juice until foamy, add sugar gradually, beat until stiff peaks expand. Then add the egg yolks while beating on a low speed.
  • 3) Add flour, cornstarch & baking powder while sifting and stirring slowly. Add grated cheddar cheese. Stir well.
  • 4) Add melted butter, mix well with a spatula
  • 5) Pour into cup, sprinkle with grated cheese & almond topping.
  • 6) Bake at 180°C for about 25-30 minutes or until cooked.
