Raisin Sponge

Ingredients

  • 6 whole eggs
  • 2 egg yolks
  • 200 gr sugar
  • 15 gr SP
  • 200 gr medium protein flour
  • 30 gr ZEALANDO NZ milk powder
  • 200 gr butter/margarine (melted)
  • 80 gr raisins (soak in water for 1-2 hours, squeeze out the water, dry with kitchen paper, cut into small pieces)

How to make

  • 1. Mix the eggs, sugar, and SP until they become thick and thick.
  • 2. Enter the flour and milk powder ZEALANDO NZ while sifting, then mixer on low speed until blended.
  • 3. Enter the melted margarine, stir back using a spatula.
  • 4. Enter the raisins, stir with a spatula until well blended.
  • 5. Pour into a 24cm diameter baking dish. Bake at 170°C for 55 minutes or until cooked (depending on your oven).
