Sponge Roll Shredded Mayonnaise

Ingredients

  • 6 egg yolks
  • 3 egg whites
  • 40 gr sugar
  • 1/2 tbsp Water
  • 1/2 tbsp Emulsifier (SP/TBM/Ovalet)
  • 50 gr Medium Protein Flour
  • 10 gr milk powder
  • 1/8 tsp Baking powder
  • 30 gr Margarine + 30 gr Butter melted, let stand until room temperature.

Filling

  • Mayonnaise+sweetened condensed milk (4:1 ratio)
  • Shredded Chicken/Beef

Sprinkled

  • Scallion, Chili Peel, Black and White Sesame

How to make

  • 1. Preheat oven to 190°C
  • 2. Beat eggs, sugar, emulsifier & water until fluffy, thick, white & traces
  • 3. Enter the flour, milk & baking powder, beat with a mixer on the lowest speed until smooth
  • 4. Turn off the mixer, add the melted butter. Stir using a spatula with a folding stirring technique.
  • 5. Pour into a 20 cm (sy, 24cm) square tin that has been lined with parchment paper, sprinkle the topping on top
  • 6. Bake for 15-20 minutes depending on your oven.
  • 7. Lift, remove from pan & wait until room temperature.
  • Give filling, roll and compact. After the new set rolls cut into pieces.
  • Sponge Roll Shredded Mayonnaise is ready to be served.
