150gr Chicken skin and chicken fat (better use free-range chicken)
3 pcs Shallots finely chopped
3 pcs Garlic finely chopped
Cooking oil
Fry the chicken skin until it becomes dry, remove and set aside. Then continue to fry the onions using a low heat, fry until golden brown. Chicken oil is ready to use
Chicken Topping
1 pc chicken breast, coarsely chopped
4 red onions, finely chopped
3 cloves of garlic, finely chopped
2 tbsp sesame oil
4 tbsp sweet soy sauce
1 tsp soy sauce
1 tsp oyster sauce
1/2 tsp pepper
1/2 tsp mushroom stock
1 tsp sugar
A pinch of salt (don't take too much because I use soy sauce).
Coarsely chopped chicken is marinated with soy sauce and then sauteed onions until fragrant, add chicken that has been seasoned and stir-fried, and given a little water, cook until the chicken water is dry.
Topping
Chives leaves to taste
Cayenne pepper, finely chopped
Mustard / pokcoy
Wet Noodles (I made my own)
Pickled Cucumber
Presentation
In a bowl, pour:
1 tbsp chicken oil
1 tbsp soy sauce
1 tbsp fish sauce
1 tsp flavoring (I use totole) a little pepper, stir everything.
Cook the noodles until cooked. Boil the vegetables until wilted. Remove the noodles and mix them into the bowl that already contains the chicken noodle seasoning. Stir well, add the chicken, vegetables, chives, and chili toppings.
